The Bimber Distillery is located in London, England and was founded in 2016. The first casks of Bimber were laid down on the 26th of May 2016 and these casks were release three years later in September 2019 with a limited release of 1000 hand numbered bottles. This release sold out in under three hours, why? It’s the fruity new make spirit that is created here, it balances so well with re-charred oak barrels, fortified wine barrels and bourbon barrels. Bimber also sources its barley from a single farm, it malts and mashes this barley by hand and then slowly ferments the wart in their very own washbacks for 7 days. A fruit forward whisky with a very bright future.

Created using a blend of single malt whisky sourced from the Speyside and Highland whisky regions in Scotland. Using whisky that has been aged for no less than 12 years to create an intriguing blend the team at Bimber gave the whisky an extra maturation period in ex-bourbon casks that had also previously been used to mature Bimber’s very own single malt whisky.

Our Tasting Notes

Nose: Freshly squeezed apple juice, honeycomb, vanilla, soft hints of balsamic glaze, delicate oak.

Palate: Poached peaches, ripe apples, soft caramel, cracked black pepper, polished oak.

Finish: Medium with lemon zest, creamy caramel and ripe orchard fruits.
